Healthy Back-to-School Lunch Options: Big Apple Chicken Salad
Well hello again! Welcome to week two of Flatout’s healthy school lunches initiative!
This week I’m incorporating some recipes that adhere to the “eating clean” philosophy. What the heck is that, you ask? Well eating clean is essentially eating high-quality foods that are free of sugar, hydrogenated fats, trans fats, etc. Basically, foods that are in their most natural state.
I try very hard to eat as clean as possible with the kids, and as you can imagine, it is not easy. Hey, you win some and you lose some as my mom used to say.
You may notice that most of my lunches contain a main meal and two snacks. No idea why I do it that way but I try to keep the snacks a mixture of savory and sweet to satisfy all cravings.
And again, remember, making the entire family the same lunch saves time! What is good for the kids is good for the parents.
Hope you enjoy this week’s video as much as I enjoyed making it! By the way, next week we are going to try something different: we’re making chocolate out of avocados. Crazy!

Flatout Big Apple Chicken Salad
- Chicken chunks (9 oz)
- ½ onion, diced
- 1 celery stalk
- 1 lettuce
- 1 apple, diced
- ¼ cup nonfat plain yogurt or a mixture of plain yogurt and light mayonnaise
Side item suggestions:
Cottage Apple
- 1/2 cup cottage cheese
- 1/8 tsp cinnamon
- Sugar substitute
- Sliced apple
Mix first three ingredients together in a small container. Serve with sliced apples.
Spinach Ranch Dip & Flatout Crisps
- 1 box of frozen spinach (thawed and drained)
- 1 container low-fat sour cream
- 1 packed Hidden Valley Ranch seasoning
Mix together all ingredients and serve with Flatout Crisps.

I’m trying to get into the clean eating thing.. but somehow it in the back of my mind I’m more of a dirty girl.. um.. eater.. um wait that’s not right.. oh heck forget it I need fries.
Seriously though this was GREAT.. and you running the NYC Marathon and all you’d KNOW why eating well is important!
I expect the next video to be shot at 5 am just before you are off training – go girl on the clean eating!!
That salad sounds so good — and, yes, we try to incorporate clean eating into every meal. . . we’re just starting out and trying to learn as much as possible.
